Cantaloupe Berrie ice lollies

Summer coolers, ice lollies and creams are all part of my summer as we bake in Malta’s scorching summer temperatures. As a woman not great in the heat, fruit ice lollies are a real go-to for me. I make these with all different kinds of honey melon as the season allows. Any other fruit within reach can be added. It’s a great way to get fruit into small people while hydrating them. Plus I don’t add sugar meaning it’s just the natural sugar of the fruit. You can if you want add a little maple syrup. Ice lollies moulds are easy to come by in the homeware section of your local store, DIY stores, IKEA. Not to mention easy to make with an old yoghurt carton and a wooden lolly stick or spoon. Use what you have.

  • 1 small cantaloupe melon, seeds removed
  • 1 cup of frozen or fresh strawberries (hulled and cleaned)

  • Cut in half and remove the seeds from the melon. Scoop out the flesh and put it into a blender along with the strawberries. Give a quick blitz until smooth. You can add about a tablespoon of maple syrup if you want.
  • Pour into ice lolly moulds and freeze
