I love egg mayo in a sandwich. And this is a great pimp up of the classical egg salad filling. This makes enough for 3 sandwiches or 2 baguettes. Just put everything in a bowl and mix together gently.
- 2 boiled eggs, chopped
- 1 spring onion, finely sliced
- 4 cherry tomatoes, seed removed and quartered
- 2 tbsp mayonaise
- pinch of salt & pepper
- ½ tsp English mustard
- ¼ tsp hot paprika
