Using Irish ingredients to make something wholesome.

Well for the day that’s in it, it seems only right to take lovely Irish ingredients and make something wonderful, wholesome and a real crowd pleasing dish. So here is my Guinness Pie & Hot Pot with Caramelized Onions. This is a house favorite here and I make it with the pastry for a pie and without as a hot pot. The caramelized onion on top is the real show stopper. We are lucky in Ireland to have great beef so our butchers really know their stuff when it comes to selecting the best meat for the cooking you want to do. If your vegetarian, swap the beef for Oyster mushrooms which I also do as I eat a mainly vegetarian diet. Match it with creamy mash and sourdough bread slightly toasted or Irish soda bread.
